Dipped Cookie Dough Cake in a Jar
Cake:
- ½ cup Almond Milk
- 3 Eggs, room temperature
- ⅓ cup Vegetable Oil
- ¼ cup Zero-Calorie Sweetener
- ¼ cup Almond Flour
- ¼ cup 1:1 Gluten-Free Flour
- ¼ cup Unsweetened Cocoa Powder
- 1 Scoop Quest Chocolate Milkshake Protein Powder
- 1 tsp Baking Powder
- ½ tsp Baking Soda
- Pinch of Salt
Frosting:
Method
- Preheat the oven to 350°F and prepare a 20 x 20 cm baking pan with non-stick spray.
- In a bowl, mix milk, eggs, oil, and sweetener.
- In another bowl, combine almond flour, gluten-free flour, unsweetened cocoa powder, protein powder, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and mix until no dry spots remain.
- Pour into the baking pan and bake for 30–35 minutes until a toothpick comes out clean. Let cool completely.
- Mix the frosting ingredients until smooth and well combined. Fill a piping bag.
- Crumble the cake with your hands into small pieces.
- Fill 6 (16oz) jars with ⅓ of cake crumbles and press firmly.
- Layer with frosting and a handful of dipped cookie dough pieces.
- Repeat the process until jars are filled. *Store in the fridge until ready to eat.
