Ingredients

CHILI LIME BREAKFAST NACHOS

  • 2 Eggs
  • 1 tbsp Cream
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • ½ cup Cheddar Cheese
  • 2 Bags Quest Chili Lime Protein Chips
  • ½ Avocado, chopped
  • ¼ cup fresh Pico de Gallo
  • 1 tbsp Green Onion, chopped
  • ¼ Jalapeno, sliced

Method

  1. Preheat your oven to Broil.
  2. Prepare a small cast-iron skillet with non-stick spray and set it to low heat.
  3. Whisk together eggs, cream, salt, and pepper.
  4. Pour the eggs into the hot skillet and scramble them with a rubber spatula.
  5. Remove the eggs and layer Quest chips, scrambled eggs, half the cheddar cheese, another layer of chips, and the remaining cheese.
  6. Place the skillet in the oven for 3-4 minutes until the cheese is melted. Top with Pico de Gallo, avocado, jalapeno, and green onions. Serve immediately.
