Sour Cream & Onion Latkes


  1. Preheat the oven to 425 F, prepare a large baking sheet with oil, and place it in the oven.
  2. Thoroughly wash the potatoes and shred the potatoes and onions with a box grater.
  3. Place the shredded potatoes and onions on a clean dish towel and squeeze out all the water.
  4. Let it sit for 5 minutes, then squeeze it out again until all the liquid is gone.
  5. Combine the drained potatoes and onions with the egg, crushed chips, salt, and pepper in a mixing bowl. Use your hands to combine.
  6. Remove the baking sheet from the oven and shape 12 mounds with an ice cream scoop.
  7. Flatten the mounds with a spatula.
  8. Bake for 13-15 minutes, flip, and bake for an additional 5 minutes.
  9. Serve with sour cream and chopped scallions, if desired.
