Ingredients

CARROT CUPCAKES

  • 3 cups almond flour
  • ¼ cup calorie-free sweetener
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • 3 eggs
  • 1 cup shredded carrots
  • 1 Vanilla Quest Shake
  • ½ cup 0% Greek yogurt
  • 1 tsp vanilla extract

  • 2 tbsp chopped walnuts
  • 2 tbsp shredded carrots

Method

  1. Preheat the oven to 350 F and prepare a muffin tin with liners.
  2. In a bowl, mix almond flour, baking powder, salt, sweetener, and spices.
  3. In another bowl, whisk together eggs, carrots, yogurt, Vanilla Quest Shake, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until no streaks remain.
  5. Fill the liners ¾ full and bake the cupcakes for 18–20 minutes. Allow to cool.
  6. Make the frosting by beating cream cheese and butter until fluffy with a hand mixer.
  7. Add sweetener and protein powder, mix until smooth. Use a spoon to frost the cupcakes.
  8. Combine the topping ingredients in a bowl. Top the cupcakes with the mixture and serve.
